Tomato Lentils with Brinjal Fritters

After those sweet meringues, heavy pub lunches I had decided to go for something simple this weekend.
I had this fresh Aubergine which I bought the other day from the farm shop and these wonderful potatoes freshly picked from the ground.
So I made Tomato lentils with brinjal fritters.

Tomato Lentils:
Ingredients needed:

Tomatoes: 4
Lentils: 1 cup
Green Chillies: 4
Turmeric, Chilli Powder: 1tsp each

Pressure cook all the above ingredients and keep them aside.

For Tempering:
Chana dal: 1 tsp
Urad dal: 1tsp
Mustard seeds: 1tsp
Curry leaves: 1 sprig
Dry red chillies: 2

Now take 1 tsp of oil in a saucepan and add chana dal, urad dal,dry chillies and mustard seeds.
As the mustard seeds start spluttering add curry leaves and then add the cooked dal and leave for few minutes. Add salt and Garnish with Coriander leaves.

Aubergine or Brinjal Fritters:

Aubergine sliced
Gram flour: 1 cup
Sodium Bi Carbonate: a pinch
Salt to taste

Mix Gram flour with salt n sod bi carbonate and start adding little water until its smooth and free flowing batter.
Now dip these slices into this batter and deep fry them.

Serve with Rice and its absolutely delicious as those fritters just melt in your mouth!!!
